Locals would gather outside Blumes Bakery, waiting for the first loaves to emerge from the Scotch oven—loaves with a golden crust and the deep, complex flavour only fire and time could create.

Blumes Today: A new chapter in an old tradition.

A bakery woven into history.

For over a century, Blumes Historic Bakery has been woven into the fabric of Harcourt, a town shaped by gold, grit, and the warmth of shared meals. It is more than just a bakery; it is a living testament to history, resilience, and the enduring power of great bread.

The fire is burning once more at Blumes Historic Bakery, and the scent of fresh bread drifts through Harcourt just as it did a century ago. But while history is at the heart of what we do, we’re not just looking back, we’re baking forward.

Our Scotch oven, Pearl, has been lovingly restored, its radiant heat once again crafting loaves with deep flavour, caramelised crusts, and that unmistakable old-world character. Alongside this piece of history stands the Mondial Forni deck oven from Italy, a nod to modern precision, allowing us to bake with consistency while honouring time-honoured techniques. Together, these two ovens, one rooted in the past, the other embracing the future, define what Blumes is today.

We do things the way they were meant to be done - by hand, with care, using real ingredients. Nothing is mass-produced. Nothing is rushed. Every loaf, pastry, cake is made from scratch, using slow fermentation, traditional methods, time-honoured skills.
